The Big Misconception: Bright Red Meat Doesn’t Always Mean Fresh

Many shoppers believe that bright red meat is automatically fresher than darker-colored meat. In reality, meat color depends on several factors, including oxygen exposure, packaging methods, animal age, and storage conditions.

Freshly cut beef may appear deep purplish-red when vacuum-sealed because it has limited

contact with oxygen. Once exposed to air, it often turns bright red through a natural process involving myoglobin, a protein found in muscle.

Color alone is not a reliable indicator of freshness.
